"Southern" Favorite

Did someone say BBQ?

My wife may be the worst "Southern Girl" ever. She isn't much into BBQ, or anything really fried. To be honest the only "Southern Food" she enjoys is ranch. So when I get a hankering for BBQ and all it's glory, it is a tough item to sell in our household. Well last night I secured a VICTORY! I may or may not have started dropping hints two weeks ago, it's a serious process.

Just as most couples do, we communicate throughout the day seeing how things are going. Somehow we always end up talking about food. Even though we plan our meals in advanced, our family is pretty guilty of sticking to the "plan" only 75% of the time. Yesterday I pitched my case, "Off the chart, but BBQ tofu wraps?" (again not a planned meal). Well the food gods were on my side because she said "Sure". I guess my mentions paid off. The coleslaw we created was inspired by Cookies and Kate. We followed her recipe almost to a T, just a few minor adjustments. We added some kale, and doubled up on the purple cabbage.

Ingredients

Wrap:

  • Tofu

  • Raw tortilla's

  • BBQ sauce (we used a Lucky's organic, but your preference)

  • "Slaw"

  • Green onions

  • Tomatoes

  • Sweet onion

  • Avocado

Directions

1. Press the tofu. We do the traditional two plate trick, wrap your tofu in paper towels (wrapped twice works best). Put a large plate on the bottom then a large plate on the top, add some weight to the top plate. Do the press for about 15-20 minutes to get as much water out as possible.

2. Slice the tofu how you like it, we cubed it here.

3. Marinade it, let it soak up all the delicious goodness that sauce has to offer. The longer you marinade the more savory the taste.

4. While your tofu is getting saucy, prep your slaw, and your additional filling

5. Preheat the oven to 400, set up a cookie sheet with parchment paper

6. Bring out your tofu and place on the cookie sheet. Put in the oven, set a timer for about 10 minutes.

7. While your tofu is cooking, cook up your tortillas. Par cook, so they are good to wrap.

8. When the timer goes off, flip your tofu. The goal is to get a little golden and sticky on each side. Let the other side cook for another 10 minutes or so.

9. Pull out the tofu and create your wrap. Once you have filled your wrap, slap it on a pan and sear each side.
